It’s not easy to find a gluten free bread recipe that is healthy and delicious, but this one was a huge hit in my house. It barely lasted 24 hours. I added in some non-dairy chocolate chips for a little treat and almond butter instead of peanut butter. It’s hard being good allll the time! Check out the recipe here from tastykitchen.com

Delicious low fat peanut butter banana bread made with oats and almond flour. This can easily be made gluten-free with certified gluten-free oats.
Ingredients:
- 3 whole Very Ripe Bananas, Mashed
- ⅓ cups Low Fat Vanilla Or Plain Organic Yogurt
- ⅓ cups Peanut Butter, Smooth Or Crunchy
- 1 whole Egg
- ¼ cups Honey
- 1 teaspoon Vanilla Extract (omit If Using Vanilla Yogurt)
- 1 cup Almonds
- 1 cup Rolled Oats
- 1 teaspoon Cinnamon
- 1 teaspoon Baking Powder
- ½ teaspoons Baking Soda
- ⅛ teaspoons Salt
Preparation:
– Preheat oven to 350ºF. Grease loaf tin with cooking spray.
– Combine mashed bananas, yogurt, peanut butter, egg, honey and vanilla (if using). Mix well.
– Add almonds into blender and grind until a fine flour forms. (If necessary, pour ground almonds through a sifter and return the larger pieces to the blender and repeat.) In a separate bowl, combine almond flour and remaining dry ingredients. Add dry ingredients to wet ingredients and mix until just moistened.
– Pour batter into prepared loaf tin. Bake for 40-45 minutes or until a knife inserted in the centre comes out clean. Let cool on a rack for 10 minutes before removing from loaf tin.
Note: This recipe is gluten free if you use gluten-free oats and gluten-free baking powder.
